Makes excellent coffee Jul 21, 2010 I love the way coffee tastes brewed in my chemex. I used Lavazza Crema e Gusto Ground Coffee, Italian Espresso in both a regular drip coffee maker and my chemex. It was good in both, but I could definitely taste less bitterness and more smoothness when it was brewed with my chemex. I'll probably also purchase the small chemex 1-3 cup coffee maker and keep that one at work.
sometimes lot tech is best May 22, 2010 In addition to the Chemex brewer you will need a kettle to boil water. I found on Amazon an electric kettle that will shut itself off after boiling. You reward? The best coffee you've had. The Chemex pot and method will yield exceptional coffee, crystal clear and NO bitterness. The Chemex will make grocery store coffee palitable. So forget about all the fancy-shmancy gear. The Chemex and a hotplate burner are all I need. I warrant you will not be let down.

Happy, but frustrated Mar 01, 2010 We LOVE Chemex coffee, but read on. First discovered this over Thanksgiving when Boyfriend's mother pulled one out of the closet that she's had since the 60s. Fell in love with the coffee. Bought one in early January. Last night, the thing sprung a leak near the bottom. Had to be thrown out (didn't help that I dropped it on the tile floor transferring it to the sink), but I digress. My guess is that you should give the water a minute or so to cool down before you pour it into the Chemex. I'm betting that pouring the water immediately after it boils is just too much for the thing. One other word of advice - Chemex takes a few minutes and requires your full attention during brewing because you have to keep pouring water into it. If I know I'm going to be in a hurry in the morning, I program the autodrip the night before to save myself 10-15 minutes. Still, it's great coffee, we love it, and I will buy another one (probably before the sun sets) and let the water cool down for 60-90 seconds after boiling and before pouring.

Great....if you like a mild coffee Jan 13, 2010 I bought this item because of it's beauty (I bought the hand blown model...$78). I like a flavorful stronger brew (somewhat like Starbuck bold). This coffee maker produces a milder brew because the hot water does not brew in the coffee beans long enough to produce the rich flavor that I prefer. After one use I went back to my French Press which produces a much better cup of coffee.
Chemex 8 Cup Coffee Maker Nov 19, 2009 I purchased this Chemex 8 Cup Coffee Maker after having bought a smaller, similar type glass filter coffee maker a few months previously. The design of the Chemex places the pouring spout at the top of the carafe, rather than at the mid-carafe level. This top placement results in less spilled coffee when pouring, since it is less confusing to the eye and brain and more intuitive. The 8 cup is more capacity than needed, since I brew for two persons. This may explain why the coffee tends to cool faster than desired, since the large surface area of the carafe allows for more heat loss during the brewing process. This is not a fault in the design, but rather an unintended consequence of my decision to purchase more capacity than necessary. I home roast my own beans and the coffee I get from this coffee maker is very good tasting and consistent. I use the Chemex square unbleached filters, which also seem to perform quite well. The only criticism of the Chemex that I have, is that the glass is not heat resistant, so I do not place the coffee maker on direct heat of any kind, nor do I wash the carafe in the dishwasher. I rinse the carafe with cold water and use the Chemex cleaning brush periodically to clean it thoroughly.
